While other flights have made the switch to meals that are faster to serve, Air India seems to have opted for a more complex traditional route: The national carrier, according to reports, will now be serving Indian thali and kulhad masala chai on board flights.

This traditional fare is being served from Feb 1 only on the Delhi-Mumbai-Delhi sector flights and will eventually be extended to other metro sector flights, said an Air India circular that was issued on January 28, along with instructions to the cabin crew on plating the thali and preparing the chai.

The thali includes seven items, including rice, dal, salad, yoghurt, vegetables, roti, bread and a choice of paneer or chicken. All thali components are required to be heated separately and then plated, which will consume more time than a regular meal.

For premium passengers, the carrier also introduced a more bespoke ‘Order to Chef’ service on select international flights out of Delhi.
